Every bar, restaurant or hotel needs a periodic refining and redefinition.
The focus of each project lies in elevating the intrinsic treasures of the establishment, detoxing by shedding elements that no longer contribute and harmonizing their services with the ever-changing mentality of today's guests and the vibrant spirit of the new generation.
Practical
Projects vary in duration, starting from 4 months.
During these engagements, I actively participate as part of the organisation helping behind the bar, serve food, delve into the kitchen, and participating in management meetings.
Simultaneously, I experience the location as a guest, feeling the energy, tasting the atmosphere, and immersing myself in various aspects of the establishment. Whether it's dining, participating in retreats like yoga classes, or simply enjoying a cup of coffee, each encounter adds to the richness of my understanding.
In hotels, I remain on-site and navigate from room to room, gaining an understanding of the guest experience.
Process
The process of each project is divided into three steps: research, the creative process of concept development, and realisation involving collaborative efforts with the staff.
Step 1: Research
Understanding an establishment serves as the ideal starting point to optimizing existing practices, refining, redefining, purify, anticipating future trends, and creating concepts that infuse a magical touch to elevate the overall experience in terms of aesthetics, food, identity, and organizational structures.
Guest experience
Researching each establishment through the lens of a guest involves feeling the energy, enjoying diverse flavors, and capturing the ambiance—whether it's dining, attending yoga classes, or simply having coffee. Staying on-site at hotels provides a comprehensive grasp of the guest experience by exploring different rooms
The soul of an establishment
Understanding the internal structures, systems, and the essence of the establishment forms the foundation of each project. This approach ensures that every project is streamlined, cost-effective, and highly implementable. I actively engage as a member of the staff, contributing to various roles such as working behind the bar, serving food, delving into the kitchen, and participating in management meetings
Local research
Moreover, local research encompasses traditions, ingredients, and extends from high-end establishments to the newest local hotspots.
Step 2: Concept development
With a commitment to quality and a deep respect for the existing while embracing change, the goal is to create concepts that upgrade unique high-end places with a magical touch, resonating with the ever-evolving, shifting preferences of guests.

Concepts development can cover food concepts, the menus, interior design, terraces and gardening, identity and house style, service, internal organization, and can include ideas for collaborations, events, activities, and in-house shop opportunities— all intricately woven to discover where the magic to enhance an establishment can be found, tailored to the unique needs and opportunities of each establishment.
Step 3: Implementation
With a blend of realism and a profound respect for individuals, I uplift and nurture teams in the implemenation process of change. This involves working closely with all levels of staff, collaborating with managers and owners, and being an integral part of both service and the kitchen.
Throughout the project, I act as a bridge between all disciplines, motivating the team to enhance the beauty of unique establishments collaboratively. I open their eyes to the beauty of the establishment, inspiring them to elevate it to the next level and embrace change through innovation. I serve as the eye-opener and inspirator.
